Abstract

En el mundo de los animales domésticos los envenenamientos causados por la ingestión de setas o carpóforos de los hongos superiores están escasamente documentados y se consideran casi anecdóticos. Sin embargo, cuando algunos hongos filamentosos se desarrollan sobre ciertos sustratos producen en su metabolismo secundario determinadas sustancias químicas que, al ser ingeridas por algunos animales, les ocasionan severos problemas de salud. Estos metabolitos se conocen como micotoxinas y causan enfermedades denominadas micotoxicosis. La expresión sintomática de estas afecciones es variable y depende de la especie animal y órgano afectado, tipo de toxina, dosis y combinación con otras micotoxinas. Los cuadros clínicos abarcan una amplia gama de síntomas, desde las cutáneas hasta efectos nefrotóxicos, hepatotóxicos, neurotóxicos y genotóxicos. En la actualidad se conocen más de 500 micotoxinas presentes en todo el mundo que pueden contaminar diversos tipos de sustratos, especialmente cereales. Su naturaleza química es muy variada pero casi todas se caracterizan porque ejercen un efecto potente, aún a dosis muy bajas, y porque son muy resistentes a una amplia gama de tratamientos utilizados en la conservación de sustancias alimentarias (esterilización, fungicidas, etc.). Su importancia radica, además de su ocasional incidencia sobre la salud de los seres humanos, en las pérdidas económicas derivadas de la inutilización de alimentos y de sus efectos negativos sobre los animales domésticos.
[ENG] Poisoning in domestic animals caused by ingestion of mushrooms is barely reported. Nevertheless, when some filamentous fungi develop on certain substrates and produce secondary metabolites, when consumed, serious health problems in some animals can result. These metabolites are known as mycotoxins and the diseases they cause mycotoxicosis. The symptoms depend on the animal species, affected organ, the toxin, the dose and the combination of other mycotoxins. The set of symptoms can be located throughout the body and are described as nefrotoxic, hepatotoxic, neurotoxic, genotoxic, and dermotoxic effects. Nowadays, more than 500 mycotoxins are known in the world that are capable of various types of substrate contamination, most commonly cereals. Their chemical composition is very diverse but all of them have a powerful effect, even at low dose, and are very resistant to a broad range of treatments that are used in food preservation (sterilization, fungicides, etc.). Although mycotoxins have an occasional impact on human health, the major repercussions are the economic losses resulting from
