AB Galicia is a benchmark for quality and excellence in the foodindustry at the European level. However, it should not beforgotten that food production systems have a significantimpact on the environment. In this regard, the Life CycleAssessment is a useful tool. Therefore, the main objective ofthis thesis is to promote a more sustainable model of foodproduction and consumption based on the improvement ofseveral limitations that have been identified. A series of novelframeworks have been proposed and applied to a series ofGalician case studies of the fisheries and dairy sectors. Fromthe results, it is now time to harmonize, through futureiterations and refinements, sustainable holistic food systemsanalysis methodologies based on a life cycle approach.
